Chimay

Founded in 1850, the Abbaye Notre Dame de Scourmont started brewing beer in 1862, when Chimay Red first saw the light of day. The abbey is located near the village of Chimay in the province of Hainault in southern Belgium. The brewery uses a very distinctive yeast strain, which gives Chimay beers their characteristic, very distinctive flavour. Chimay is one of the ten Trappist breweries that brew beer and certainly the most famous of these.
